What I Ate Wednesday #4 – Easy Pumpkin Cupcakes

Yesterday, I decided to wake up extra early and do the P90X yoga DVD, so I was starving by the time we ate breakfast.
Greek Yogurt Waffle – I am in love with these lately, we have been eating them a lot.

Lunch #1

Ever since I started writing What I Ate Wednesday posts I have realized I am such a boring simple eater. I just feel comfortable eating this way and It works for me.

So lunch #1 was peanut butter and jelly with a few crackers. 🙂

Lunch #2 

Last night, I started to make a baked chicken and veggies meal, then Steve called and said he was coming home for dinner and felt like pasta (it’s so difficult to plan dinner when Steve never knows what he wants). So, I just put all the ingredients in a tupperware and baked it for lunch. It is so easy and delicious!

While Isabella was napping Sophia and I decided to make some cupcakes, with pink frosting, of course.

Dinner

Monday night I pulled out some of my frozen meat sauce and we still had some leftover, so we paired that some pasta.

We started our meal with a salad.

Then had spaghetti with garlic bread.

Dessert

After the girls went to bed I had one more cupcake. So delicious!

Do you tend to eat the same things or do you like to change it up everyday?

    I eat the same things all the time. But I do try to make something new once or twice a week, even if it’s as simple as putting a different topping on my salad.

  6. The baked chicken and veggies look so good! I like to switch it up and try to find a few new things to make every week. However, we have some favorites that we always go back to like Chicken Piccata and Tilapia Tacos. I haven’t done the P90x yoga in quite sometime but have been itching to do some yoga so I might have to break it out! Thanks for the reminder!

    • I think I am going to start to try a new recipe each week maybe? I hadn’t done P90X yoga in so long and I forgot how much I love it and how sore it makes me. The most difficult part is how long it is. 🙂 Have a great day!
