What I Ate Wednesday # 24 – Protein Pancakes

Meal # 1 – 7:30

Last week I played around with my Oatmeal Protein Pancakes to try and make them a little more like “regular” pancakes. I think with my two new additions I have achieved success. They are delicious. We enjoy these pancakes for breakfast this morning. The entire recipe has about 30 grams of protein. (20 grams of protein)

Running out the door to dance I had a Luna bar and a glass of milk. (17 grams of protein)

Meal # 2 – 11:45

To start with I had hummus and homemade pita chips.

Followed by a salad with turkey, walnuts, homemade pita croutons, and a sprinkle of cheese.

Finally, I finished with turkey and cheese roll- ups. (30 grams of protein)

Meal # 3 – 3:30

This meal was a mix of things. I had a handful of crackers with peanut butter on toast.

I also had a little bit of my White Chocolate Candy Mix.

We usually make this treat for holidays and pass it out as gifts. However, this year with everything going on we missed making it for Easter. But, I had all the ingredients on hand so yesterday we made this yummy treat. (13 grams of protein)

Meal # 4 – 6:00

Steve has started having golf league on Tuesday night, so Nana made us dinner on Monday. My mom came over to help me put the girls to bed since Steve wasn’t going to be home. I was lucky enough to have leftovers for tonight’s dinner.

Nana made Cheesy Chicken and Cheesy Potatoes. These were a hit with everyone in our house. (30 grams of protein)

    That white chocolate candy mix is definitely calling my name!!

    My mom always made this candy at Christmas (among all kinds of other treats) that was called “Overseas Candy” and apparently you start it in October/November and it’s ready to eat by Christmas. She told me her past relatives used to send it overseas to the soldiers during the war so by the time they would’ve received it, it was good. I love the candy though, almost like a thick fudgey toffee.

    The pancakes look so good! I love super thin pancakes but never can get them that way. Around the holidays I love homemade toffee and my hubby loves fudge. Well, who am I kidding I love pretty much all holiday treats as well as making them so we get good and overloaded on sweets during that time of year!

    • You will have to try these pancakes. The less you let the batter sit the thinner they will be. 🙂

      The holidays are killer for sweets. I freeze some of the sweet treats we get and then pull a few out here or there for us to enjoy in moderation.

    That white chocolate candy mix looks delicious. My grandma makes that for Christmas, except she calls it “White Trash.” Lol.

    • Oh I do like a nice hot bowl of chili on a cozy day.

      It is too good. I have to be very careful about only taking out a small serving. Yes, I always heard it called “white trash” too but I changed the name because I thought this was cuter. 🙂

    • It is delicious! It is quite difficult not to munch on it all day long. One thing we do in our house is cover treats with a towel and it helps to have it out of sight out of mind. I do this for the girls and me. 🙂 That is also why I only make it a few times a year!!

      For a new mom the best thing about these pancakes is you can make the batter ahead of time and use it whenever you have a minute.

    • It is highly addicting, but I love to give it away. 🙂

      We love pasta and desserts, as well!! And pasta is a nice and quick meal.

    • Thank you, they are easy and so much better for you then store bought pita chips. I love dipping them in hummus. 🙂

    Yummy looking pancakes! I love a protein packed breakfast. I feel like we rarely eat the same thing in our house… but tonight we had homemade pizza which I make at least 2-3 times a month. It’s super simple + much healthier homemade!

    • They are delicious, the girls and I love having eating them for breakfast or a snack later in the day. 🙂
