I’ll let you in on a little secret. During the week the girls and I usually make “healthier” ingredient breakfasts, such as greek yogurt waffles, oatmeal protein pancakes (recipe to come), etc. When the weekend comes we make some “regular” recipes, that is what Steve calls them.
Today, Sophia wanted pancakes with sprinkles in them. She told me that Baby (that is what she calls Isabella) wants sprinkles and Daddy too. But, I didn’t have enough time to make my completely homemade Buttermilk Pancakes, so I made my quick and easy almost homemade pancakes instead.
Quick and Easy Buttermilk Pancakes – Adapted from Betty Crocker.com
2 cups Biquick
1 1/2 cups buttermilk (homemade recipe here) (I used less then Betty Crocker recipe)
1 tsp baking soda
sprinkles, chocolate chips, m &m’s (optional)
Mix all ingredients together and cook on griddle or skillet. I sprinkle the sprinkles, m&m’s or chocolate chips (depends on what Sophia decides) on the pancakes once I put some batter on the pan before I flip. That way if we don’t want all the pancakes to have sprinkles they don’t have too. I personally don’t care for sprinkles, I know crazy. huh?
Top with your favorite toppings – we like butter and maple syrup.
