Happy Saturday Everyone. We have a nice and relaxing day planned, actually we have nothing planned. 🙂 So, that means I could make our favorite pancakes. We have tried many different type, but these are by far our favorite. Here is our recipe:

Buttermilk Pancakes

Adapted from Better Homes and Garden


1 3/4 cups flour (I have used white, wheat, whole wheat white – they all work)

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 egg, slightly beaten

1 1/2 cups buttermilk or sour milk (recipe here)

1 1/5 tablespoons unsweetened applesauce (you can substitute oil instead)

1 1/5 tablespoons oil (I used canola oil)

1/2-1 tsp vanilla extract

Sprinkles (optional- the girls love these)


1. In a large bowl stir flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk, applesauce, oil, and vanilla extract  Add egg mixture all at once to flour mixture. Stir until moistened (batter will be slightly lumpy).

2. Pour about a 1/4 cup batter onto a hot griddle or skillet, cook over medium heat. Try to only flip once. Wait to turn until there are bubbles on one side. Flipping pancakes too many times and make them rubbery.

3. Top with your favorite topping and enjoy!
