WIAW # 108 – Back on Track

Wow, it feels great to be back on my clean eating regimen. My body is finally feeling more like itself. Since, it’s Wednesday it’s time to talk about all this food.

Meal #1 – 6:30am

After working out and getting McKenzie and McKayla up I ate a couple Greek Yogurt Waffles (well a variation of my original recipe. I will share ASAP, I think I finally have it perfected).

Meal #2 – 9:30am

I grabbed an apple before heading out to the swimming pool. We met some friends up at the pool in the morning instead of after naps and it was a nice change of pace.

Meal # 3 – 12:30pm

After getting back from the pool and getting McKenzie and McKayla down for their nap I made a salad with chicken, almonds, walnut, and a drizzle of garlic expressions dressing.

Meal # 4 – 2:30pm

The girls and I were really missing our green smoothies, so I made up a batch and we all loved it. Healthy and delicious. Such an easy way to get veggies and fruit in.

Meal # 5 – 5:30pm

Dinner did not turn out like planned. I intended to make baked breaded chicken with green beans/carrots and applesauce (everyone loves this dinner and that makes me one happy mama). Well, in the middle of making up a pan of veggies, preheating the oven, and breading the chicken it just turned off, stopped working…. Ugh!! A couple days ago we had this same problem. Anyway, my homemade family dinner didn’t happen.

Instead, I heated up some leftover meatloaf muffins and paired it with the veggies (I was able to get those cooked). It actually turned out to be a delicious dinner. Just because your healthy plan doesn’t work out doesn’t mean you should just forget it, this is why I love to have healthy options readily available.

After dinner I had a teaspoon of almond butter. Nut butters are great way to curb a sweet craving. I love that it satisfies my want for sweets at the end of the day.

Throughout the day I munched on some homemade all natural popcorn (Place 1/3 cup of kernels in a brown paper bag fold over the top and cook it on high for 2 minutes; easy and delicious – McKenzie and McKayla love it too).

I love how I feel at the end of a nice and healthy day of eating. I can always tell when I haven’t been eating my best.
