I have to admit it felt great to not think about food while on vacation. Of course, I watched my portions because that’s just who I am, but I didn’t worry about protein, carbs, or fat grams I just ate what was available and sounded good. But, I have to say once I got home I was ready to get back to my routine and my body has thanked me for it.
Breaks are always a great way for me to get refreshed. Sometimes I just need to give my mind a break from the tracking and counting.
Here is a look at what I have been eating since getting home:
Meal #1
After Chisel Cardio this morning I ate a couple of my favorite Greek Yogurt Waffles (21 Day Fix Style – 1/3 cup flour, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 cup plain Greek yogurt, 1 egg – mix the dry ingredients first then add in the wet ingredients and stir until completely combined) with a handful of grapes.
Meal #2
Once we got home from gymnastics and a doctors appointment I was starving so I ate a taco salad with lettuce, ground beef, and sauce; simple and delicious. I try to always have healthy food ready to go, so I don’t reach for unhealthy foods when I’m starving. After my salad I had an apple.
Meal #3
Before heading out to the bus I quickly whipped up my healthy Tomato Soup and enjoyed a cup of it with a couple Trader Joe’s turkey meatballs. Such a delicious combination.
Meal #4
I made the girls some homemade pizza rolls, so I had a couple of those along with my easy and healthy chicken nachos (I used an extra thin corn tortilla as chips.).
“Treat”
I ended my day with half a banana and a 1 tsp of almond butter.

It is always nice to get back after vacation and go back to eating a bit healthier. That’s exactly what I did after going to florida in the first week of February.
