WIAW # 117 – Getting Back on Track

Lately, I have been indulging a little too much and it’s time to reign it my eating. I am ready to stop over indulging, my body is ready too. However, I must admit I was loving eating without over thinking it. For the most part I am always thinking about the food I put in my mouth (I don’t think I will get over that, but it’s okay.). This year I really let myself enjoy the Christmas season without too my anxiety when it comes to food.

Breakfast

After working out and getting dressed I enjoyed a couple of Greek Yogurt Waffles (1/3 cup flour, 1/2 tsp. baking powder, 1/2 tsp baking soda, 1/2 cup greek yogurt, 1 egg, 1 tsp. vanilla extract – mix all the dry ingredients first, create a well in the middle then add the wet ingredients, stir together until well blended – cook in waffle iron). They are delicious and decadent you would never guess they were under 300 calories for two huge waffles. Yes, an entire serving is only 267 calories.

Some of you may know I have another Greek Yogurt Waffle recipe that uses a 1/2 cup of flour instead of a 1/3 cup (this minor tweak reduces to carb content to fit my diet plan). In my opinion I don’t think they taste that different, but it cuts the carbs down and makes it a little more 21 Day Fix friendly.

Snack

Once, we got home from Isabella’s gymnastic’s class we all shared a fruit smoothie. (1 banana, 1 cup frozen pineapple, 1 cup frozen strawberries, 1/3 cup frozen blueberries, 1 cup of water). I love making fruit or fruit/veggie smoothies for us. Smoothies are a great way to get more fruit/veggies into your diet. They are filling, tasty and make the perfect snack.

While making our smoothie I ate a few pieces of turkey.

Mid-Day Tasty Treat

Of course, I just had to test my new homemade apple pie cups once again and it was just as amazing today as yesterday. It is finally ready to share.

Lunch

After having a smoothie and two apple pie cups I just wasn’t hungry for lunch until about 2:00. I enjoyed a delicious salad made with leftover crockpot paleo cashew chicken (I love using leftovers and this chicken has so much flavor I didn’t need any dressing.).

Snack

I ate a few Skinny Pizza Rolls with the girls before having dinner with my hubby. We have family dinners most nights, but Sophia had a friend over so we ate separetly tonight and you know what? It was kind of nice eating dinner with just my husband while the girls played.

Dinner

Steve and I love chicken enchiladas. I do love making these homemade, but tonight i cheated and used a box (I add my own chicken and cheese but everything else is in the box.). I’m sorry I forgot to take a picture.

Snack

Since, I enjoyed a sweet treat mid-day I decided to skip an after dinner treat and simply had a teaspoon of almond butter with half a banana. I truly try to eat a balanced diet, some days are easier than others.

One of the the first things I stop when I need to get back on track is to taking bites of my girls food. Extra bites, licks, and testes add up. Seriously, I was eating a few too many pretzels, stealing bites of their peanut butter and jelly sandwiches, grabbing M&M’s, etc. But, once I tell myself no more that’s it, I’m good. For me its really not difficult. I know how eating healthy makes me feel and I love it. I feel much stronger and healthier and that is the best feeling in the world. The best part about my whole indulging over the holidays is that it taught me my weight doesn’t matter. My weight didn’t really change of these last few weeks, but man did I feel more bloated and fluffy. Eating healthy is so much more then appearance, it’s all how you feel on the inside. Don’t forget that!!
