Oh my is it really Wednesday? I can’t believe how fast life just passes us by. I am really trying to cherish each and every moment, my girls are growing up before my very eyes and I am not ready.
After getting back from Thanksgiving I wasn’t feel my best, I have been eating way too much junk. I have been grabbing too many chocolate covered pretzels, crackers, etc. This week I decided I needed to clean up my eating and that’s just what I did. This time I am not doing it for a number on a scale, I am doing it because I didn’t like how I was feeling. On Monday, I started loosely following the 1600 calorie plan from 21 Day Fix. By loosely I mean, no tracking or anything just consciously thinking about my meals and snacks.
Breakfast
After my 5am workout I ate 2 huge Greek Yogurt waffles which is 1 serving (1/3 cup flour, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 cup Greek yogurt, 1 egg.). That’s it so easy and only 1 red and 1 yellow container for the entire recipe. I like to top mine with a little butter and powdered sugar so I usually count that as a tsp of fat/oil.
Snack
I had a handful of strawberries. 1 purple
Lunch
After Isabella’s gymnastics we headed to Costco and I picked up a rotisserie chicken (one of my favorite things to buy) so I made a big salad with the chicken, almonds, walnuts, and a splash of dressing (1 tablespoon to be exact). I also had an apple. (2 green, 1 red (maybe a little more I didn’t really measure), 1 orange, 1/4 blue)
Snack
One of my favorite clean eating guilty pleasures is paleo protein bars (I used my paleo nut free granola in them). I am not really sure how to count these, this goes with my loosely following the plan.
Snack
After school I made my girls Skinny Pizza Rolls by Dashing Dish and they were a hit. Of course, I had a few too. I can’t believe how long it has been since I made these, I will definitely be making them more often. I love being able to give my girls tasty, but healthy meals and snacks. Dashing Dish has a ton of great ideas.

Dinner
My girls weren’t really hungry after the pizza rolls, but I wanted more protein so I heated up a couple of my leftover meatloaf muffins. (1 red) I love having these in my fridge for a quick, healthy meal. This week I made the meatloaf muffins without oats, simply because I didn’t feel like grinding them up and I wanted to know if it would make a difference. Well, they are just as delicious and I was able to omit an ingredient. I can’t say how different they tasted because I really need to taste test them side by side; maybe next week.
Snack
I had a banana and 1 tsp almond butter.
As you can see my day consisted of a lot of healthy and delicious food. I am definitely feeling less bloated and just all around better. I know with the holidays quickly approaching I am going to indulge a little more than usual and that’s okay. I just love knowing how easy it is to eat healthier when I want too. Life is all about balance and that is what I strive to do each and everyday.

I’m a sucker for anything cooked in a muffin tin, can’t wait to try your meatloaf muffins. They are definitely going on the menu for next week.
