Can you believe Christmas is one week from today? Crazy right? I can’t wait to have Steve home for two weeks. We are ready for some much needed family time.

Today, I thought I would change things up a little bit, instead of giving you a play-by-play of what I ate yesterday I am going to talk about my favorite foods from this past week. I definitely find it more difficult to eat healthy this time of year.
As most of you know I love my sweets. But, like I always do I continue to eat everything in moderation. I might indulge just a little more around the holidays.
Lately, we have been eating pumpkin protein pancakes and this week the girls and I tried something new. We made our pancakes using cookie cutters. It was so much fun and easy to do. I simply made up a batch of my pumpkin protein pancake batter and we poured the batter into the cookie cutters on the pan. One thing I figured out quickly is that you need to cook the pancakes slowly and do the majority of the cooking on the first side, otherwise, when you remove the cookie cutter the batter well spill out over the shape and defeat the purpose.
The girls loved these so much they each had three different pancakes. They had so much fun choosing which shape they wanted next and I loved that they were devouring these healthier pancakes.

Sophia wanted a pumpkin, since we were eating pumpkin pancakes.
Lately, I have been enjoying my peanut butter protein shakes. I have started working out again (after having recovering from my hernia surgery) and these shakes taste delicious after an intense workout. Since, I am breastfeeding I feel this is a great way to make sure I am getting enough calories in my day. Quick and easy.
I have really started to love using my crockpot. Seriously, I don’t know why it has taken me so long. It is amazing with four little ones.

I have been enjoying my fair share of white chocolate candy mix. It is delicious and a special treat. I also like to make it and give some away, otherwise, I will eat way too much of it. I made a batch for Sophia’s teachers. I bought cute little boxes from the dollar section at Target and put the candy in there with a gift card to Starbucks. I wish I would have taken a picture for you, but of course I was putting the gifts together right before walking out the door, life with kids.
