Have I told you lately how much I love counting macros? Seriously, I feel as though I am enjoying food more then ever, I am eating all of my favorites and still feel great. I don’t feel deprived and I NEVER feel hungry.

Today’s Food Diary:

Meal #1

After working out arms and getting dressed for the day I enjoyed an oldie, but a goodie. I followed my Pumpkin/Banana Protein Pancake (21 day fix version) recipe but added half a ripe banana. So good!!

Snack #1

Okay this week has been utterly exhausting and it is not slowing down, so I got a much needed caramel macchiato.

Snack #2

After gymnastics and Isabella’s class picnic (we didn’t get to stay for pizza because McKayla and McKenzie were done) I ate a couple pieces of turkey to hold me over until we got home. I always bring turkey with me when I know I am going to be out for awhile; it’s an easy, healthy snack.

Meal #2

Today, I ate a tuna salad made with three tablespoons of lite miracle whip, 2 pieces of crispy center cut bacon and lettuce. Easy and delicious. I love all the protein tuna adds to my day and it is a nice variation to my typical beef taco salad (which I still love).

Snack #4

Today, I was in the mood for one of my chocolate cakes with ice cream, so that is just what I ate. It hit the spot and was delicious.

Meal #3

Lately, I have been loving poached eggs on Italian bread. It’s so good and has always been a favorite of mine, but I wasn’t eating them very often. See, while I was following the 21 Day Fix Extreme meal plan I never let myself enjoy this meal because I didn’t want to waist a yellow on a piece or two of bread. Since, I started counting my macros I can eat this meal and not feel guilty. I love it!! I love that counting macros is like a puzzle, you simply figure out what fits into your day.

Meal #4

I made healthy nachos using an extra thin tortilla as chips (you simply crisp up the tortilla in a small skillet with 1/2 a tsp. of oil), taco meat (91% lean ground beef), and 1 ounce of Trader Joe’s lite mozzarella cheese.

Snack #5

I ended my day with half a banana and 2 teaspoons of almond butter.
