What I Ate Wednesday #2 – Protein Pancakes

 
Breakfast – 7:30 
Today, I decided to wake up before the girls and get my workout done. After my workout I wanted a protein packed breakfast. So we had my oatmeal protein pancakes. These are a great alternative to regular pancakes. No, they don’t taste exactly the same as typical pancakes but they are still delicious. I topped mine with a little butter and maple syrup.
 
 
Snack – 10:00
In the car on the way to Sophia’s dance class.
 
Lunch #1 – 11:30
I had half a peanut butter and jelly sandwich with some mini crackers. The whole half a sandwich started when Sophia and I used to share, but she has not been into the PB&J sandwiches lately.
 
Lunch #2 – 1:00 
Low carb wrap with hummus. Turkey and cheese and a couple rice cakes.
 
Snack – 3:00
Since it is cold outside I felt like something warm and cozy so I had a bowl of instant oatmeal.
 
 
And a bowl of fruit.
 
Dinner – 6:00
Steve was unable to join us for dinner tonight. The girls and I decided to have breakfast for dinner. Yum!!
I made myself a few egg whites, turkey sausage, and a pieces of toast.
 
Dessert – 7:30 
A couple days ago I made some cookies to bring to my parents house so I had one for dessert.
 
 

These cookies are so easy to make and they are delicious. I got this box from Costco. They only sell it during the holidays. So, next year I’m going to stock up.
All you do is add butter and mix it all together. It is so simple.

    • Thank you. We are pretty simple eaters, but we definitely love our breakfast. Sometimes we eat it morning, noon, and night. 🙂

  3. All of your food looks awesome! I think your fruit salad looks the best right now though. Lol. I’m really craving some bananas!

    I bet my mom would love those cookies. Ghiradelli chocolate is like her favorite! I wonder if I could make a homemade version…

    • Oh Thank you. We love fruit salads in our house, we have one everyday. 🙂 Ghiradelli is the best. I would love a homemade version. Let me know what you come up with.
