I will begin by telling you yesterday was a difficult day eating wise for me, I was not feeling my best. My back was killing me, so it was simply too much work preparing meals for the girls and myself. I did my best and we all made it through the day.
Tomorrow, I will fill you in on what’s been going on this week with the twins and myself. We had our weekly ultrasound on Monday and Baby B is giving us a little trouble. She’s a little stinker.
Meal # 1 – 7:30
Greek Yogurt Waffle – We had some batter leftover from the day before and I really didn’t feel like making a new batch, therefore I only had one waffle today (about a 1/3 of the recipe). (8 grams of protein)
Snack – 9:30
Peanut Butter Protein Shake – I haven’t been in the mood for these lately, but today it sounded like a good idea. A quick and easy way to get a lot of protein. (32 grams of protein)
Meal # 2 – 11:30
Homemade pita chips with hummus.
A salad with turkey, walnuts, homemade pita croutons, and a sprinkle of cheese. (30 grams of protein)
Snack – 2:30
Meal # 3 – 4:30
A poached egg on an english muffin. My yolk broke when I was taking it out of the pan; so disappointing, but still delicious. (12 grams protein)
Meal # 4 – 6:30
Last night Nana made us our weekly dinner. We had chicken parmigiana with spaghetti. Every time Steve carries in all this wonderful food it seems as though he went to an expensive restaurant and picked up carryout. Nana is the best. (30 grams of protein)
I meant to make some broccoli to go with it, but honestly I was not feeling well last night. So, we went without a veggie. I know I am such an awful mom. :/

I think the easiest way to get veggies in is with snacks. I was always a big fruit snacker, but if I only allowed myself to have fruit for desserts or after meals, I was much more likely to grab some baby carrots with sunbutter, sliced cucumbers, or some sugar snap pea pods with greek yogurt for dipping as snacks.
I’m pretty sure your family was thrilled with the lack of broccoli though. 😛

Its so disappointing when your yolk pops before you get to eat it!! Poached eggs can sometimes be a bit of a mess; I wish I could perfect the perfect poaching technique!
The worst. Since, my egg was such a flop yesterday I made one today and it turned out perfect. 🙂

I’ve been struggling with the vegetable thing ever since our little guy has been home. They just seem to take a lot more prep work and time that I don’t have! I’ve been buying lots of frozen veggies that I can quickly steam and I throw spinach in smoothies.
As important as I know vegetables are they are another thing we have to do in preparation for dinner. I am definitely going to have to get back in the habit of buying more frozen vegetables. I like the idea of throwing spinach in smoothies, I haven’t tried it yet, but I am going to this week. 🙂
I hope everything is okay with you and the babies! I love veggies and most days eat more of them than anything else. I always have cut celery, carrot sticks and cherry tomatoes in the fridge for snacking. I make lots of green smoothies for myself and The Love Nugget. We love them!
I have always wanted to try adding spinach to our smoothies, but I have been afraid. Now that more and more people are telling me they love them we are going to for sure make them. 🙂 My girls pretty much eat anything so I am sure they will love them.
