What I Ate Wednesday #15

I love checking on what I am eating each week. It’s always nice to take a minute and evaluate what I am feeding my body.

Breakfast 7:30

I was really in the mood for French Toast, but I knew I needed the extra protein from my Greek Yogurt Waffles. (23 grams of protein)

I had hummus and pita with a turkey wrap. (26 grams of protein)

Half peanut butter and grape jelly sandwich with a fruit salad. I didn’t take a picture of the peanut butter and jelly sandwich, it was kind of boring.

Lately, I have been craving Thai food. I have been loving the noodles, the flavors, everything about it and it is so easy to make. Tonight I made us General Tso’s Chicken. (30 grams of protein)

The girls and I made funfetti cupcakes over the weekend so I decided to have one for dessert.

FYI: If you want to make them with less calories simply substitute applesauce for oil, no one will be the wiser. I actually think they turn out even better.

So, excited to hit my goal of 100 grams of protein again today. I will continue on this path for my babies.

    And I totally agree with your comment about the applesauce substitute. Calories aside, it really does make the cupcakes moister and sweeter!

    • It is so good when you order it. But I have been making it for years and really it’s pretty good. There are so many delicious recipes out there. 🙂

    I LOVE thai food. In fact, I got a Thai inspired hummus last week! I usually have a couple in my refrigerator at a time. Right now it’s garlic, supremely spicy and Thai.

  5. How much apple sauce do you use? Just the same amount as oil? I made a cake with a can of pumpkin once, it was a-mazing.

    • Yes, you substitute exactly the same amount applesauce for oil. Yes, I love using pumpkin puree. I have a recipe for pumpkin cupcakes on here that is truly delicious. 🙂

Your food inspiration is encouraging. I’m always looking for new and different ways to get more protein in my diet. Hummas is a fab idea!

    • Oh YAY! I am so happy to have you. I will defiantly go over and check your blog out. I love reading twin blogs, they are so far and few between. 🙂 I will only eat food that tastes good, but I try to keep it healthy. I am so glad you stopped by!

    • That is so funny you asked I just tried it the other day because I always make my girls smoothies with Greek yogurt and it turned out great. I am actually going to change the recipe to say either will work. Thanks for asking. 🙂

I make something similar, but with almond butter (though I sometimes use peanut butter), banana, egg protein powder, dark chocolate and unsweetened vanilla almond milk. It’s really good!
