Oatmeal Protein Pancakes
New and Improved (2/9/14)*
Adapted from: Biggest Loser Pancakes
Servings: 1-2
Ingredients:
1/2 cup oats (I used Trader Joe’s Gluten Free Oats)
1/2 tsp cinnamon
1/2 tsp vanilla
1/4 tsp baking soda
3 egg whites or 1 egg and 1 egg white
1/2 cup low-fat cottage cheese
1 tablespoons flaxseed (optional)
Directions:
I use my magic bullet to make these so I add the ingredients in this order, if you use a regular blender you will want to reverse the order to make sure the cottage cheese is closest to the blade. Blend until mixed well. Let sit for about 5 minutes before cooking.
These make about 1-2 servings, but you can easily double the recipe to suit your needs. For the girls and me this is the perfect amount. 🙂
*The new and improved version has the taste and texture of regular pancakes. These are truly delicious.
