I love these waffles. Not only do they taste terrific, they are high in protein and low in calories. These waffles are a great way to start your day. Another wonderful thing about these waffles is that you can eat the entire recipe and not feel guilty. I love making recipes that I don’t have to worry about eating too much. You will notice most of my recipes are usually only 1-2 servings. You can always double the recipe to be able feed more people. With the size of our family  this is what works for us for now. These waffles are a great way to start your day. Enjoy!

Greek Yogurt Waffles

WIAW greek yogurt waffles

Makes: 2-3 Waffles

Servings: 1-2

Ingredients:

1/2 cup Flour

1 tsp baking powder

1 tsp baking soda

1/2 cup plain Greek yogurt (you can you any flavor, I prefer to use plain and add vanilla extract)

1 egg

1 tsp vanilla (omit if you use vanilla yogurt)

1-2 Tbls. water

Directions:

1. Combine first 3 ingredients and make a well in the center.

2. Add yogurt, eggs and vanilla to dry mix.

3. Combine until mixed well.

4. Turn on waffle maker and let batter sit until ready (about 5 minutes)

Entire Recipe (depending on which brand of Greek yogurt and type flour +/- 5 grams):

Calories: 345

Fat: 4g

Carbs: 48.5g

Fiber: 8g (depends on type of flour)

Sugars: 4.5g

Protein: 23.5g

21 Day Fix Style

Everything is the same except you only use 1/3 cup flour. (1.5 red, 1 yellow)

I have actually decided I like this version better, it is a little softer.

    I made this recipe this morning. I added 1 tsp of cinnamon and it was delicious. I was worried bc my batter was pretty thick, but the waffles turned out great. Thanks for posting!

    • I am so happy you liked them. Cinnamon would be delicious. The best part is they are healthy and taste great. You can’t beat that. 🙂

    • They are delicious. I love that you can enjoy waffles without the guilt. 🙂

      Yes, I brush some canola oil on the waffle iron before each making each waffle and that works great for us. 🙂

    • I have never tried freezing them, but I am sure it would work. I would suggest reheating them in your toaster. If you try it let me know how they turn out. 🙂
