WIAW # 71 – Baked Hard Boiled Eggs

I hope you had a wonderful day. We had a strange day around here, but it was a great one. At 3:30 in the morning we lost power and the night went a little nuts. Isabella woke up very scared. She told Daddy she couldn’t see and it was too dark. Of course, we pulled her into bed with us. I actually truly loved the snuggles. I did enjoy holding my Isabella, but she was a little squirmy so I am not sure how much sleep we actually got. Our power wasn’t restored until about 12:30 this afternoon. It was very out of the ordinary for us not to have a hot homemade breakfast, but we all survived. I can’t remember the last time that has happened. Our love for breakfast has been passed down from generation to generation. My grandma always made wonderful breakfasts, so did my mom and now I do it for my girls. This morning was kind of a bummer. However, I will assure you once the power was restored the first thing I made was a delicious runny poached egg. It hit the spot.

I have to tell you I ended up loving our powerless morning. Isabella, McKenzie, McKayla and myself (Sophia was at preschool) had a wonderful morning of puzzles, dancing, singing, reading and lots of fun. I loved not having technology. I couldn’t even vacuum or do laundry. It was quite perfect and peaceful.

Since, our day was a little off I am simply going to share a new and easy way to make hard boiled eggs. I found this right before Easter and used this technique for our Easter eggs. I just made another batch today. I didn’t want to share it with you until I knew I loved it and I definitely love it. This is the easiest way to hard boil a big batch of eggs. I love having them readily available to eat when I need a quick snack or salad topping. This is a great snack to hold me over until dinner.

Tip – Older eggs peel easier. Try to use eggs that are about 2 weeks old and the peel will simply crumble off.
