Good afternoon everyone. I hope you are having a wonderful week thus far. I have to tell you McKenzie had another amazing night in her crib. She slept from about 8pm to 8am with only waking to feed at 3:30am. I am so proud of my little McKenzie. I can’t believe how big she is getting. I am going to work on McKayla in the next few weeks, she just seems to tiny to me. She also came home form the NICU a week later than McKenzie so I will give her a little extra time. I have to tell you I am starting to feel like a new women. All I need is a little sleep and I am good to go.
Wednesday, means time to talk all things food.
Breakfast – 7:30
I have learned that the way to make my mornings easier is to prep for breakfast the night before. So, last night I made up a batch of my Pumpkin Protein Pancakes. They are seriously amazing. You must try them.
After Workout Snack – 11:00
Peanut Butter Protein Shake – Hits the spot every time.
Lunch – 12:30
On Monday I made a batch of Crockpot Mexican Shredded Chicken. So, for lunch on Tuesday I had some chicken and rice. This chicken is so tasty and healthy. I love it.
Lunch # 2 – 1:30
I was having a hungry day so I made myself half a peanut butter and jelly.
Dessert After Lunch 🙂
I told you no judging today. For some reason I was in the mood for one of my chocolate cakes, so you know what I made myself one and enjoyed every bite.
Snack 3:00
I ate a mix of peanuts and M & M’s. Love the combination or salty and sweet.
Dinner 5:00
I ate dinner in courses last night. I couldn’t figure out what I felt like eating and I wasn’t very hungry by the time dinner rolled around. So, I ate a salad with Isabella, then later I had a bowl of cereal.
I was obsessed with salads all throughout my pregnancy. I ate one just about everyday. But, ever since McKenzie and McKayla were born I haven’t felt like having one, but last night it was delicious. I am now looking forward to having one again. Hopefully, this means I am getting back into eating salads more often.
Dessert 7:00
Steve surprised me and brought home one of my favorite desserts, Chocolate Tuxedo. So good!
Throughout the day I snacked on fruit from my pre-washed stash. I really like that I have been washing a ton of fruit at the beginning of week. This way I can eat it whenever I want. I am going to start cutting up a bunch of lettuce at the beginning of the week too. This will make eating salads so much easier.

I’ve been eating a lot of leftovers lately. I’ve been making one or two big meals a week and then saving leftovers to eat throughout the rest of the week. Like today is a leftovers night and I feel SOOOO much more relaxed and like I have so much more time throughout the day!
