What I Ate Wednesday # 66 – Snow Day

Snow, snow, and more snow. I really thought we were done with this crazy weather. I can’t believe how much snow we have gotten and of course another snow day for Sophia. It actually fell on the perfect day. We really needed it and we certainly took full advantage of our time together. We had a GIRLS day, our favorite!

Since, it’s Wednesday you know what that means. It is time for “What I Ate Wednesday” and I am going to share what my day of food looked like. I have been working on cleaning up my diet and today was no different. Well, actually it was not my healthiest, but we all have off days right? If you are new here Jenn hosts a link-up to share what everyone has been eating lately. I love getting new healthy ideas.

Post-Workout – 6:30am

Like usual this morning I woke up at 5:30am to get my workout in before the girls woke up. As much as I wanted to stay in bed I got myself up and hit play. The hardest part is getting out of bed. Once, I finished my workout I made my new favorite protein shake:

1/2 cup unsweetened almond milk, 6 ice cubes, 1 scoop protein powder, and 2 tablespoons PB2 (peanut flour). Easy and delicious!

Breakfast – 8:30am

I am loving the time change. My girls have been sleeping in all week. I know this won’t last but for now it’s amazing.

McKenzie was the first to wake up at 7am. Wow!

Sophia didn’t wake up until 8am. It is so nice having a few minutes all to myself before the fun begins. Once the girls were all up we decided to make Greek Yogurt Waffles.

Snack – 10:30am

First snack was not so healthy, dark chocolate covered pretzels dipped in almond butter. At least they were dark chocolate right?

Lunch – 12:30am

I had leftover meatball casserole. It was very good, but next time I am going to figure out a way to get the baguette crispy. In this recipe the bread is soggy and I am just not sure I love it that way. I will keep you updated. If you have any suggestions let me know.

Snack – 3:00pm

Second, not so healthy snack, yogurt covered pretzels dipped in almond butter.

Dinner – 6:00pm

Sunday, I actually made a tentative meal plan for the week. I love being able to make dinner every night and it is so much easier when I have a plan. I don’t plan my week very often. Tonight was crock-pot salsa chicken. I made chicken nachos with it and they were delicious. I used my favorite chips form Trader Joe’s. Tomorrow, I will eat this chicken with some rice and almonds. I love being able to get more than one meal out of a recipe. I even sent my mom home with some for her and my dad to have for dinner. It feels so good to make dinner for them; they do so much for us. I love helping them whenever I can.

Crock-Pot Salsa Chicken:

1 -1.5 Cups Salsa (I put our salsa in my magic bullet, but you can leave it as is)

2 pounds Chicken

1 Tablespoon Taco Seasoning

Put it all in the crock-pot and turn it on high for 2-4 hours or low for 6-8 hours.

Dessert – 8:30pm

My single serve chocolate cake with ice cream. Perfect way to end my day.

So, looking back at my day I guess it wasn’t as rough as I had envisioned. That’s a plus. I am feeling really good about where I am at health and fitness wise (I will talk more about this on Friday), P90X has been great and I am seeing changes and feeling amazing!!
