Friday Favorites # 6 – Crockpot Mexican Shredded Chicken

Good evening everyone. I can’t believe I am actually going to get out two posts today. I know it is crazy!!

Since, it is Friday I am linking up with Melissa for Friday Favorites. I love looking back at the week and focusing on the great things that happened.

Favorite Moment

My favorite moment would have to be realizing that we are moving into and easier phase with McKenzie and Mckayla. They are starting to get easier at night. They are becoming less and less colicky.

This is a tough one. I think I am going to have to choose two.

Okay I really think I finally perfected these and this new recipe is delicious.

Crock-Pot Shredded Mexican Chicken

1 Cup Salsa (any kind)

1 packet taco seasoning (I used Mrs. Dash no salt added)

1 -1.5 lbs. chicken breasts

Put all the ingredients into the crock-pot and mix it all together. Cook on high 2-3 hours or low 4-6 hours. Shred the chicken and enjoy.

This was my first crock-pot meal a few weeks ago and it was so tasty I made it again this week. I love that I made this on Monday and was able eat it throughout the week.

I did this amazing HITT workout on YouTube; you have to try it. I love HITT workouts, they are intense and fast moving. They aren’t boring.
