I hope you are having a wonderful week thus far. We had a great day today; having Mimi here might have been the reason!!

Since, it’s Wednesday I am link up with Jenn for What I Ate Wednesday. I can’t believe how long it has been since joining in on this fun link-up. So, I thought it was time to share what I have been eating lately. There was a time in my life when I never missed a week, but life has been crazy I just can’t always make it happen.

I have been getting a lot of emails and messages asking about my caloric intake, so today I am going to show you how many calories I actually ate today. Now, I must say my calories vary from day to day but typically I eat around 1800 calories per day.

Breakfast 7:00am

After my workout and getting dressed I had pumpkin protein pancakes and a Greek yogurt waffle (I couldn’t decide what I was in the mood for and I had both batters made). (calories 332)

Snack 9:30am

After we got back from getting Sophia on the bus I took a shower then had another Greek yogurt waffle (the recipe makes about 2 huge waffles, depending on your waffle iron). (calories 176)

Lunch 12:00pm

After getting back from Isabella’s gymnastics class I had half a peanut butter and jelly sandwich with my girls. (calories 215)

Snack 3:00pm

I was hungry again, so instead of snacking mindlessly I had some turkey and a poached egg on toast. (calories 260)

Dinner 5:45pm

While I gave the girls a bath, Steve made dinner for us. He made creamy parmesan chicken with penne noodles. Sorry I didn’t take a picture. But it was delicious. (calories 570)

Snack 6:30pm

A handful of mini peanut butter crackers with the girls. (calories 125) with a Reese’s peanut butter cup. (calories 110)

Total Calories: 1788

This is approximately the amount of calories I ate today because I did have a handful of popcorn. I will tell you I like to keep my calories around 1800, but I am not extremely strict about it, I am always snacking on fruit or carrots and I may grab a few crackers or a handful of popcorn (like I did today), etc.

    Love your day of eats. My favorite foods this week have been olives.

  3. Those greek yogurt waffles look amazing!! Im always looking for new waffle recipes and it looks like I found one!
