Pumpkin Protein Pancakes

Before I get to the recipe I have to tell you how wonderful McKenzie’s first night in her crib went. She has been taking long naps in her crib for a few days now, so I thought it was time to give it a try at night. Last night at about 7:00 she was ready to go to sleep. I took her upstairs nursed her in the rocking chair and put her in her crib with her pacifier and she fell fast asleep. I thought wow that was way too easy. Well low and behold she was awake screaming 30 minutes later. I was not expecting that, but we knew we didn’t want her to think she took a nap so Daddy stayed with her and rocked for about an hour. I went back up because I wanted to make sure her little tummy was full, I fed her again and she went to sleep. This time I was mentally prepared for a rough night, I was ready to be up all night with her. But, to our surprise she made it to 4:45am. Yes, she made it from 8:30 until 4:45 in her crib. After feeding McKenzie at 4:45 she then slept until 8:oo am. We were so proud. I seriously can’t believe her first night went as well as it did. However, I am not getting my hopes up. I am planning on tonight being off, it is much better for me to be pleasantly surprised than disappointed. I will let you know how it goes.

wiaw 52 - pumpkin pancakes

1-3 Servings (6-8 pancakes)

Ingredients:

1/2 cup oats (I used Trader Joe’s Gluten Free)

1 egg + 1 egg white or 3 egg whites*

1/4 tsp. baking soda

1/2 tsp. cinnamon

1/2 tsp. vanilla

1/2 cup cottage cheese

1 tablespoon flaxseed (optional)

1/4 cup pumpkin puree

*1 egg + 1 egg white make for thicker pancakes, than using all egg whites*

Directions:

If you use a magic bullet, like I do, put the ingredients in the order above and blend until smooth. If you use a blender reverse the order. You want the cottage cheese and pumpkin puree the closest to the blade. Once mixed let sit for 5 minutes or longer. I typically make this the night before and it is perfect in the morning.

It is simple and delicious. This ENTIRE recipe has more then 30 grams of protein and has about 350 calories (this depends on whether or not you use eggs or egg whites).

FYI: You don’t have to like cottage cheese to love this recipe. I actually do not like it at all; I have tried it many times (I really want to like it) but I just can’t stand it. However, I love this recipe. These are my go to pancakes.

  2. Hey girl! I know this is an older post, but I was reading your recent WIAW post and found this recipe. I make an almost identical protein pancake mix, but I thought I’d share my base recipe in the event that it might save you some time. Mine is nearly identical:

    1/2 cup oats
    1/2 cup cottage cheese
    1/2 cup of egg whites (or egg substitute—this was the difference. It cuts seconds, but prep time is critical! But if you prefer real eggs, your way is perfect)
    1/2 tsp baking powder

    That’s my base. I, too, throw my mix in the Nutribullet. I’ve added pumpkin (like you!), bananas, applesauce, peanut flour, and cocoa powder. Your recipe is flawless, but I thought it might help to know you can cut baking soda and you can use carton egg whites and it totally yields fluffy pancakes. My boyfriend (who, like me, eats healthy) and I cook for each other, we switch off. I did breakfast for dinner this weekend with my pancake recipe. He was shocked when I told him these were low carb, high protein, and basically awesome—since we tend to eat a low carb, high protein diet. Your blog is awesome, you’re definitely a fit mom! =)
