My 32nd Birthday Weekend

We enjoyed a wonderful weekend with a lot of family time; that’s the perfect weekend in my book. I loved having my girls home for an extra day and it was so much fun celebrating my birthday ALL weekend long with them. My hubby and girls sure know how to spoil me.

The celebrating began Friday night at dinner with friends at Capital Grille. Of course, Steve surprised me by calling ahead to tell them it was my birthday; best hubby ever. Not only was the table decorated when we arrived, we end our evening with complementary dessert and it was delicious.

It was the perfect night out, just what this mama needed. This may just have to become a birthday tradition; hint, hint.

Saturday was officially my birthday and it all began with a couple extra hours of sleep.

Our morning was spent relaxing while awaiting the arrival of my new nephew. My sister was due 10 days prior and had been in labor for 24 hours, so we knew he was going to make his debut any moment. My sweet nephew simply waited so he could share his birthday with his auntie. He finally came into the world just after 12pm. As soon as McKayla and McKenzie woke up from their nap we hurried to the hospital (I couldn’t wait to snuggle my baby boy.).

We ended my day with Mimi and Papa at J. Alexanders; it was delicious and of course no birthday would be complete without cake and ice cream. Boy do my parents love to spoil their kids on their birthdays and that is just what they did. Thank you mom and dad for making my day perfect. I love you very much.

Sunday was another relaxing morning (no extra sleep for me, Steve only gets up with the girls on Mother’s Day and my birthday. Ha!! No really I am okay with that I love morning snuggles with my girls.). We spent our afternoon celebrating with Steve’s mom, stepdad (Phil) and grandma (Nana). My mother-in-law and Phil prepared a wonderful meal and Nana made one of her delicious cakes (seriously, they are the best). Thank you for making my birthday amazing. You sure know how to make a girl feel special. I truly love and appreciate having you as my in-laws. Thank you for loving me. You kindness never goes unnoticed.

I feel so blessed to have so many people who love me and take time out of their holiday weekend to spend it with us. Thank you!!

We ended our weekend with our first family trip to the pool. This is the start of an amazing summer.

Thinking Out Loud # 107

  1. Wow, I am already on post four for the week. I can’t remember the last time I was able to get this many out in one week. Have I told you lately how nice it is to be done with dance for the summer? I love that we don’t have many structured activities for summer. Our days mainly consist of playing at the pool, playground, and anything else we can think of that sounds fun. I love to be able to be spontaneous with my girls and that doesn’t generally happen during the school year, so summertime is SO MUCH FUN!!
  2. Saturday is my birthday so this morning Sophia and I thought it was only fitting to start our day with chocolate cake and ice cream. Haha!! I love my girl; she loves chocolate just like her mama. This morning I was the “coolest mom ever” (that won’t last long – Ha!!) And guess what? I was able to adjust the rest of my macros for the day and made it fit. I love the flexibility and balance counting macros brings to my eating.
  3. In the past I probably would have thrown in the towel and had an all day binge fest, but now I know I can eat what I want as long as I balance it out with healthier things. Easy peasy as my girls would say. The rest of the day consisted of egg whites, zucchini chips, salads, cauliflower “pancakes”, chicken, extra lean ground turkey etc. Basically, the rest of my food will be lower carb and lower fat (I used most of my allotted carbs and fat on the cake and ice cream, but it was well worth it.). If it fits your macros is basically like playing Tetris all the pieces need to fit together by the end of the day, but there can be different ways of achieving it.
  4. I found these pork tenderloins at Costco and we have been loving them. Seriously, Isabella asked for them two nights in a row!! I love finding new protein sources my girls actually enjoy eating and best part is these are quick and easy to make.
  5. Watching these two grow up together is such a blessing. I love seeing their relationship grow and grow. They have such a special bond. “Sissy will you hold my hand?”
  6. I always catch McKayla and McKenzie in such silly sleeping positions, but this one just might take the cake….
  7. and this one is just too sweet for words…
  8. We have such a fun filled weekend planned for my birthday. I feel so blessed to have so many people who love me. My hubby, girls, parents, and in-laws are always excited to celebrate with me. I feel so blessed to have each and every one of them in my life. As a mom the majority of my days are spent taking care of everyone else, but it’s a nice treat to be taken care of once a year. Okay, maybe twice a year; they do a great job of spoiling me on Mother’s Day too. But, once it’s over I know it’s back to reality and I must say I do love my job as a mom; it’s truly my dream come true.

Riced Cauliflower “Potato” Pancakes

Oh my goodness I have fallen head of heals in love with riced cauliflower (I have eaten it everyday since I discovered this gem.) . Seriously, it is such a delicious and easy way to get my veggies in; I have been craving these “potato pancakes” like crazy.


  • 85 grams of rice cauliflower (I have used both frozen and fresh)
  • 2 tablespoons liquid egg whites or 1 egg white
  • seasoning of choice (I always add minced garlic)


  1. Place your cauliflower in a microwave safe bowl and microwave for 2-3 minutes. This is not an exact science. You can’t mess it up. You simply want your cauliflower soft and workable.
  2. Preheat skillet to medium.
  3. Take it out of the microwave, add egg whites, seasoning and mash together until combined.
  4. Spray skillet with nonstick cooking spray and add your cauliflower mix. At this time use your spatula to form the mixture into a pancake shape.
  5. Let cook for a few minutes on one side then flip and finish cooking on the other side.
  6. That’s it. Once done enjoy with your favorite topping.
  7. I love to top mine with salt, reduced sugar ketchup and sometimes mustard. They end up tasting like a mix between hash browns and potato pancakes. Seriously, so good and incredibly filling. I love that you actually feel as though you are eating something less healthy when in reality it’s simply cauliflower. In my book that’s perfection.

My next venture is going to be making cauliflower tater tots. I will keep you posted.

Dance Recital 2017

I can’t believe recital week has come to an end. It really is bittersweet for me. I love all the excitement of being on stage. I actually love the entire process; I mean I did dance from age 4-17. But, I must say by Sunday I was exhausted (I am not as young as I used to be). I could barely function. Good thing Sunday was chilly and rainy, just what this mama needed after a long week of late nights.

Recital week began with a run through night which only Sophia had to go to. This evening consisted of each dance simply figuring out their placement on stage. Not too bad, just a late night.

Tuesday and Thursday were both full dress rehearsals. Luckily, we didn’t have to do makeup. All four girls had to be there ready to go by 4:15. Well, Tuesday that didn’t really happen. My planning was a little off that night, but by Thursday I had it all together and we were on time. Go me!!! Seriously, getting four girls ready is no joke. Tights, costumes, bun, oh my!!

Friday, was the first officially show and we were ready. I had a great routine going by then, so it really went very smooth. But, I did have to do all of their makeup and hair. Whew, that was a doozy, but of course I did love it and so did they.

Saturday was night #2, their final show and they rocked it. They all danced beautifully and had so much fun.

Oh and I am not sure I told you, but I danced with my girls in the mother-daughter (or son) dance and it was so much fun. We practiced for about 6 weeks and learned a pretty tough routine. I was apprehensive at first but, I truly enjoyed it and can’t wait to do it again next year. Once a dancer always a dancer.

Thank you to all our family who came out to support our girls. We are so blessed to have you all in our lives. It truly meant a lot to all of us to have you there.

There is one special lady we must thank for everything she did for us this week and that is Mimi. She was with us through and through. We couldn’t have done it without her. Seriously, she was at every rehearsal and show. Without Mimi our lives wouldn’t be the same. She helps our day to day run smoother. She has special place in all our hearts. Mimi being there meant everything to my girls and me. Thank you for all you do for us. We love you very much.
